My Vedic Kitchen
The financial climate of the world at present is enough to cause anxiety among all of us. Recognizing these negative emotions as symptoms of an aggravated Vata dosha helps make sense of them. Vata is the air element in our bodies—very delicate and hard to balance at the best of times. We can help ourselves by trying to pacify Vata. Here is a nourishing recipe that literally warms you from the inside! WARM CARROT MILK Ingredients: 1¼ cup (per person) organic milk 1 green cardamom pod 2 medium carrots Organic Sucanat to taste Prepare the carrots by cutting off the ends, peeling the carrots, and finely grating them. Pour the milk in a pan and cook on medium-high heat with the cardamom. Wait till it becomes a little hot before adding the grated carrots. Stir often, allowing the milk to gently boil until the carrots soften. Turn off the heat and keep stirring (to avoid a skin forming on the milk) until it reaches the temperature of hot tea. Pour in a bowl, add the Sucanat—a little less than you think you need, as the carrots are sweet. Enjoy “eating” this milk with a spoon, like you would any hot cereal. Variations In our house, this was a favored breakfast during the transition from winter to spring, and could be supper or dinner with the addition of quinoa or amaranth. When I was growing up I often heard, “You shall find whatever it is that you seek; and the form of bliss you find will be in keeping with your thoughts.” I interpreted that to mean that if you send out positive energy or vibrations into the Universe, only positive energy will come back to you. This has been a personal motto throughout the toughest periods of my life, and I hope it will inspire you as well.
