Message from the President - My own Amrit experience It's funny how we forget the most important things in life.

When we were moving MAPI's corporate offices from Colorado to Iowa, my personal supply of Amrit ran out. I made a mental note to get another jar, then forgot, and then forgot again. A cold hit, along with some allergy syptoms and some days of being emotionally and mentally overwhelmed.

Then I began taking Maharishi Amirt Kalash again.

A few weeks later, the contrast was so distinct, the nourishment so obvious, the elevated function in my mind and body so marked, that I wondered how I ever could have forgotten what this true Ayurvedic Rasayana delivers.

Maybe it's good it happened this way. The contrast showed me again that the difference between intellect and experience is often vast. This was an experience of the embodied intelligence in Amrit's herbs versus an intellectual understanding of Amrit's value. I decided to re-read some of the basic literature on Amrit, and was reminded of the elegant complexity of this rasayana - one of the first products to be offered when Maharishi revived Ayurveda.

There are 42 different herbs and fruits in Amrit. The number of ways that the primary herbs - just the primaries - can interact, mathematically expressed, is nearly impossible to grasp. But to give you an idea, here's what the actual number looks like on paper:

1. Eat Foods with High Prana

Prana is the vital energy present in fresh vegetables and fruits and pure air that we breathe. One of the reasons for eating is to import or imbibe prana, so choose foods high in prana. More fresh vegetables and fruits will give an immediate energy boost. It's important to cut the vegetables and cook them fresh at every meal. Buying pre-cut vegetables means that you have already lost some of the prana. For that reason, buy whole vegetables and fruits for maximum vitality.

2. Eat Organic or Locally Grown Foods Whenever Possible

Organic foods have more prana than foods exposed to chemical fertilizers and pesticides. If your body has to work hard to purify the chemicals every time you eat, you'll feel fatigued and toxic.

Locally grown foods are higher in prana because they don't have to be shipped or stored and can be bought tree-ripened. There is another reason to eat locally grown foods - they mirror the ratio of the five fundamental element levels as the climate in which you live.

One Ayurvedic principle says that equal proportions of the elements is always enhancing. Locally grown herbs, fruits, vegetables and dairy products will have a more powerful and energizing biological impact. Herbs and plants grown in the desert are more helpful for the people who live in that kind of dry, hot climate. This principle doesn't apply to grains or beans, which are grown in different regions. If you can't get locally grown veggies or fruits, it's better to eat imported produce. The point here is that if you have a choice, buy or grow local produce for more vitality.

How many of us think about the taste of our food?

My Vedic KitchenI mean actually focus on the taste of the food we eat. I find, people almost always describe tastes in relative, very general ways. For instance, if a person is asked to describe dessert it's often a general description, too sweet or delicious and the entrée could be too spicy or bland or good. Or, like my daughter who described her food tasting "up and down and round and round!" The fact is, in our rushed lives, we rarely think about taste as a subject on its own, with its own distinct, unique, delicious identity.

Not only does Ayurveda recognize taste as one of the important values of food; it also regards it as a doorway to personal health because it influences our core state of balance. In other words, taste has medicinal value in Maharishi Ayurveda.

According to Ayurveda, six tastes can be ascribed to all foods. These are: sweet, salty, bitter, astringent, pungent and sour. All six are needed to balance a meal, and hence to balance your individual nature or in Sanskrit, your prakriti. How much of each is needed by your individual body will depend on whether you are a Vata, Pitta or Kapha or a combination thereof. This constitutional arrangement is called your "dosha" in Maharishi Ayurveda.

The quality of food is a pivotal focus of Maharishi Ayurveda. Food is considered a foundation of health. The lack of food purity - contamination with GMOs, chemicals, pesticides, herbicides and improper growing methods is implicated in many health issues.

Maharishi Ayurveda's approach is uncomplicated. Purity, or in Sanskrit "sattva", is key. As a general benchmark, favor whenever possible organically grown foods.
