Carving a Halloween pumpkin this year? Try baking the seeds for a nutritious snack. Oven-roasted pumpkin seeds are easy to make and offer a nourishing source of protein. The Vata-balancing influence of pumpkin seeds, ghee, and salt make this recipe a great choice for autumn, which is Vata Season.

Tip: Remember to Prep Your Pumpkin Seeds
Not sure how to roast pumpkin seeds in the oven? It’s easy. After you scoop out the seeds, simply soak and rinse them to remove any excess pumpkin flesh (the stringy bits), then pat dry and follow the recipe below.
Serves 2-3
Ingredients
- 1 cup of pumpkin seeds
- 1 teaspoon of ghee
- 2-3 pinches of salt
Directions
- Place all ingredients in a bowl and mix with your hands, coating all of the seeds with ghee.
- Place the seeds on a baking tray into a preheated oven at 400 °F for approximately 5-7 minutes.
- For a lighter roast, remove the seeds when you first smell the aroma.
- For a darker roast, bake a little longer to light golden brown.
