We’ve added our Vata Churna which is calming and grounding during the Winter months and blends Ayurvedic spices like turmeric, ginger, and cumin to boost agni (digestive fire). Swap in our Pitta or Kapha Churnas to best suit your needs.
INGREDIENTS:
1 Japanese sweet potato
1 medium Winter Squash (we’re using delicata in our recipe)
1 fennel bulb
3 carrots
1 small bunch parsley
1 large onion
2-3 Tablespoons sesame oil or ghee
3 Tablespoons MAPI Vata Churna or Churna of choice
Salt to taste
INSTRUCTIONS:
Preheat the oven to 375 degrees Fahrenheit.
Prep and chop all ingredients into equal and bite-sized pieces, adding all ingredients to a large sheet tray or baking pan or dish.
Dress with sesame oil or ghee and churna seasoning. Mix well and bake at 375 degrees for 45 minutes, stirring occasionally to prevent burning.
